1 lb. Tanias
2 eggs, beaten
1 Tbsp. Onion, grated
1 tsp. melted margarine
1 Tbsp. Flour
1 tsp. baking powder
Salt and pepper to taste
Milk to mix
Oil for frying
Parboil tanias, allowing them to boil for ten minutes. Cool and grate them. Add beaten eggs, seasonings, onion, margarine, flour and baking powder. Mix together, moistening with a little milk. Drop mixture by spoonfuls into a hot oil; fry on both sides until golden brown. Drain and serve hot.
Note: Tania is a potato-like plant (see picture), related to taro and cultivated in the Caribbean, tropical America and Brazil.
